I planning on using a Rotary shaft seals which I purchased from Modell UBoat (http://modelluboot.de/) for Robbe U-47 and was wondering if it would be a good idea to add a stuffing box also. I'm in the US what would be a good grease for the stuffing box?

Hi 205 etc,
Stuffing boxes are really only used in surface models - they can't cope with much pressure difference. Go with shaft seals, I say. The link below gives a fairly comprehensive answer:
